Fruit Pizza

Spring Fruit Pizza - My boys love this recipe! Very Easy!

1 Pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/2 cup butter or margarine, melted
1 egg
1 cup whipping cream...
1/2 cup Betty Crocker® Rich & Creamy cream cheese frosting (from 1-lb container)
3 1/2 cups assorted fresh fruit
Heat oven to 375°F. Lightly spray 14-inch pizza pan or 15x10-inch baking pan with cooking spray.
In medium bowl, stir cookie mix, melted butter and egg until soft dough forms. Press dough in bottom of pan. Bake 10 to 15 minutes or until light golden brown. Cool completely, about 45 minutes.
In chilled medium bowl, beat whipping cream with electric mixer on high speed until soft peaks form. Gently stir frosting into whipped cream. Spread over cookie pizza. Arrange fruit on top.

Easy Cheese Danish

So I know that I loooooooove Danish's. I used to get them every time that I went to starbucks. So when I came across this.. I had to save it.. I cant wait to try it!!


Easy Cheese Danish
This is a quick and easy recipe for cheese danish that my family simply adores. Honestly, I don't know where the recipe comes from originally, since my Mother and Grandmother both made this for as long as I can rememb...er. Despite being so easy to make, it's satisfying and wonderful for a quick weekend breakfast treat. We love it best still warm from the oven, but it will keep well for a couple of days if it's well covered and placed in the refrigerator. It also reheats well in the microwave for a few seconds. Try this simple recipe for your own family one of these days and see if they don't rave about it too!

Ingredients:
2 cans ready to use refrigerated crescent rolls
2 8-ounce packages cream cheese
1 cup sugar
1 teaspoon vanilla extract
1 egg
1 egg white

Glaze:
1/2 cup powdered sugar
2 Tablespoons milk
1/2 teaspoon vanilla extract

Method:
Preheat oven to 350* degrees and grease a 13X9-inch baking pan. Lay a pack of crescent rolls in the pan and pinch the openings together. Beat the cream cheese, sugar, vanilla, and egg together until smooth. Spread the mixture over the crescent rolls evenly and then lay the second pack of crescent rolls on top of the cheese mixture and brush with egg white. Bake for 35-45 minutes until the top is golden brown. Top with glaze after cooling for 20 minutes.

Kitchen Notes:
I have made this danish using low fat cream cheese and stevia (sugar substitute) and it was delicious! Also, the amount of filling the original recipe calls for makes a VERY heavily filled danish. I have halved the filling using 1 package of cream cheese, 1/2 cup of sugar, 1 whole egg, and a 1/2 teaspoon of vanilla extract and it was still very good. If you use the half filling method, bake for closer to 30-35 minutes.

Skeeters game

We went to the Skeeters game tonight as a family and with Jareds Parents and his uncle Bruce. We won the game, which was nice. It was super hot though. Here is a picture of Jeremy with Swatson and then the best picture ever known to man lol!

Well woman exam and birth control

So I had my yearly today. Everything is fine but we talked about birth control. I think I'm going to get the Mirena. Its covered by the insurance, which is nice. Free is better then paying for Jared to get the snip snip. Plus that is sooo permanent. The question of a 4th has come up and some days we are like hell no. Other days we might consider it, in a few years. It is our decision in the end and we will cross that bridge ay a later date.

Westin will be 7 months old in 4 days.....I still dont believe it. The time has gone by sooo fast. He is such a good baby. So laid back and relaxed.

Jeremy and Jackson are at each others throats now that summer is coming to an end. It will be better once Jeremy goes back to school.

Westin Jon


He arrived on January 10th at 3:52 p.m. He weighed 8lbs 3oz and was 20 inches long. Seriously his birth was amazing. I will post the birth story later, since I have typed it, but I want to revise it. Births with a midwife though are simply amazing and my experience was so much better then my hospital births. :)

Yikes!

Once again.. I have not posted in months.. its awful. Well I am now 38 weeks pregnant with boy #3. His name will be Westin Jon. Its is kinda crazy I have been pregnant this long! The other two were both born in my 37th week! This pregnancy has been my easiest out of the three. I also went with a midwife instead of an OB/GYN. That was an awsome move on my part! I love it! I cant wait for the birth. I will try to make it to the birth center, but if not then he will be born at home. I am so excited to be able to experience that. I will post a birth story once he comes. :)

Jeremy is doing well in school. He seems to enjoy it. Which I am glad. He has his struggles, but I know he will be fine. He turned 6 in November.. which is hard to believe that he is already 6. WOW!

Jackson is starting to say words now, which is nice. He cant say much, but most of what he can say i understand. He also loves to color on objects other then paper :/. Its a tad bit annoying lol. He will be 2 in February and I need to start planning his party! I have no clue as to what theme I want to do. I do have time.

Other then that life has been crazy as usual. I will so try to keep this up now! I know I have said that before, lol but I want this here for records of events.
